Chicken Tortilla Soup

Serves 4-6 people
  • 2 cups shredded chicken
  • 32 oz of chicken broth/stock
  • 1 can of whole kernel corn (drained)
  • 1/4 cup of chopped cilantro (adjust to your liking)
  • 2 cans of diced tomatoes with chiles, or 2 cans of tomatoes/1 can diced chiles
  • 1 medium onion - diced
  • 1 tsp of chile powder
  • 2 tsp of garlic powder
  • Juice from 1 squeezed lime

  • Add everything to a large pot, simmer for 30 minutes, serve with Tortilla Chips, and sour cream, jalapenos, hot sauce, shredded cheese, and anything else you think would be tasty.
